One of the best things about this recipe is that you probably already have the simple ingredients needed to make it: store-bought pita bread, olive oil, and some kosher salt.
We love these homemade air fryer pita chips because they are easy and quick to make when you're craving a delicious snack to dip into your favorite dip. But they're not just great with dips, they will also taste great with salads and soups.
These golden brown pita triangles will complement your favorite Mediterranean dishes like my homemade tzatziki, my Greek pasta salad, or my instant pot Greek chicken. Sounds like a Mediterranean feast!
What I really love about this recipe is that I can make just the amount of pita chips I need at the time. That's another reason why homemade snacks are so convenient-no waste!

Pita bread or pita pockets - there are different types of bread labeled "pita" at the grocery store. Some are pocket style (that can be split apart) and some are more like flatbread that can't be split. You also have whole wheat or high protein varieties to choose from. You can make air fried chips from any of these varieties. The key will be to keep an eye on them as they cook.
Olive oil - I love the flavor of extra virgin olive oil, but you might prefer something neutral like avocado oil or even coconut oil. You can also use a liberal amount of cooking spray instead if you like.
Coarse salt - kosher salt works best, but you can use what you have on hand like table salt or sea salt. If not using kosher salt, cut the salt amount in half.
Seasonings - use your favorite herbs to put your own spin on things. I love them with just salt and olive oil, but another great option is to use Tex Mex flavors like chili powder and garlic powder. Mediterranean flavors like oregano, za'atar, or Italian seasoning is a sure thing, or make it sweet with cinnamon sugar.
Instructions
Note: Pita pockets can be split into two round pieces (they will be pretty thin, or they can be left as is). Flatbread style pita bread can't be split apart and should be left as is.
Place the pitas on a cutting board. Drizzle olive oil on both sides of the pita bread. Cut each pita into 8 triangles. Sprinkle with kosher salt and seasonings (if using).
You can also spray them with oil or toss them in a bowl with oil.
Once pitas are cut, add them to the air fryer basket. It's okay if they are slightly overlapping. In fact, that will help them stay in place when the hot air is circulating in the basket.
Air fry the tortillas at 320-325 degrees F for 6 minutes. Pause, turn the chips over then continue to cook for another 5 to 7 minutes, or until golden brown and crispy. Time will depend on the thickness of the pita. For best results, check chips before time is up and remove the ones that are at the desired crispness.
Air fry in batches. I like to make about 16 chips at a time.

- Stale pita bread works great for this recipe as does leftover pita pockets.
- Use a pizza cutter to cut pita pieces.
- Add a pinch of cayenne pepper or black pepper for a touch of heat.
Can I make homemade pita chips in the oven?
Yes, you can make them in the oven. Preheat the oven and place prepared pitas on a baking sheet. Bake at 425 degrees F. Cooking time will depend on how thick your pitas are; anywhere from 5 to 10 minutes, turning them over once they are golden brown.
How to store
To keep your leftover pita chips fresh, let them cool to room temperature before storing them.
Place the strips in an airtight container and store at room temperature. Use in a day or two. If they go stale, air fry them for a minute or two.
