I use my homemade sausage gravy recipe to make this casserole because it is so easy to make and tastes better than gravy mix. To save time and mess, I use refrigerator biscuits. Everyone at my house likes them, so the convenience is worth it for me.
This recipe is great for a special occasion like a birthday breakfast or for Christmas morning. The prep is quick and the cook time is just a couple hours. The combination of fluffy biscuits and savory gravy makes it one of our all time favorite recipes.

Ingredients

Breakfast sausage - I like regular Jimmy Dean ground sausage. This is pork sausage. Sub with chicken or turkey sausage, if preferred. If you want a kick, use "Hot" or add some crushed red pepper flakes.
Butter
All purpose flour
Milk - whole milk, or 2% will give you the best results for the homemade gravy.
Garlic powder - optional for extra flavor.
Worcestershire sauce
Eggs
Refrigerator biscuits - I used Pillsbury Grands biscuits. I have not tried this with homemade biscuits, so if you do, please let me know your tips!
Heavy cream - for the eggs
Salt and black pepper
Instructions
For the homemade sausage gravy:
- Heat a large skillet over medium heat. Crumble sausage into pan and cook until well browned and no longer pink.
- Add the butter over the cooked sausage and let it melt.
- Sprinkle flour over the sausage mixture. Stir it into the sausage and cook to get rid of the raw flour taste, about 1-2 minutes.
- Slowly add the milk, stirring constantly until well incorporated. Bring mixture to a low boil (bubbling slightly).
- Once the gravy is gently bubbling, turn the heat down to low and simmer until thickened. Add garlic powder, Worcestershire sauce, and salt and pepper to taste.
- Set aside off heat while you prepare the casserole.
For the crockpot biscuits and gravy casserole:
- Spray the crockpot insert well with nonstick cooking spray.
- Cut the biscuits into quarters so that you have 24 pieces and set aside.
- Spoon half of the gravy into bottom of the crockpot. Top gravy with 12 pieces of biscuits in a single layer.
- Crack the eggs into a bowl and add the heavy cream. Beat until fluffy. Pour eggs over biscuit layer.
- Add remaining gravy to the top egg mixture, then top the gravy with the remaining 12 biscuit pieces.
- Cook on low heat for 2 to 2.5 hours, or until eggs are set.
- Note that the biscuits will not be a deep golden brown like when baked in the oven.
- Serve with fresh fruit and orange juice!
Variations
- The addition of cheese is a common way to prepare this crockpot biscuits and gravy casserole. Layer one to two cups of shredded cheddar cheese, Monterey Jack (or whatever cheese you prefer) to the casserole.
- You can make this without the eggs, if desired.
- You can make the gravy without sausage.
- Add some green chiles or jalapeños to the gravy for a delicious Tex Mex twist.
Can I make it in the oven?
To make this recipe in the oven instead of the crockpot:
- Preheat the oven to 350 degrees F.
- Make the gravy and cut the biscuits into quarters.
- Prepare a 9 by 13 inch baking dish with cooking spray.
- Place all biscuit pieces in a single layer on the bottom of the prepared pan. Top with half the gravy, then add the beaten eggs. Top with remaining gravy.
- Bake for about 30 to 35 minutes or until eggs are set.
How to store
Store leftovers in an airtight container for up to three days. Reheat in the microwave.
Freeze in freezer safe containers or ziptop bags for longer storage. Thaw in the refrigerator and reheat in the microwave.
