This dish is kinda like nachos and kinda like a casserole. So, whether you serve it as a delicious dinner or an appetizer recipe, it's sure to become a family favorite.

Ingredients

Ground beef - a lean ground beef is your best bet since this casserole has a good amount of cheese. Ground turkey or ground chicken can be used if you need a lighter option.
Black beans - we like black beans, but pinto beans or another kind that you really like will work. Or you could skip the beans and add about half a pound more ground beef.
Yellow onions - I prefer yellow onions for this recipe. If you're in a hurry you can skip the onions and use about a teaspoon of onion powder.
Jalapeños - when the jalapeños get cooked down, they aren't very hot. You can replace them with green bell pepper, red bell peppers, or serrano peppers for more heat.
Garlic - we like fresh garlic cloves, but if you're in a hurry you can add some garlic powder instead,
Taco seasoning - I use my own taco seasoning recipe, but a store bought version will also work. If you're in a pinch, try a combination of chili powder, cumin and smoked paprika.
Water
Doritos - I used Nacho Cheese Doritos.
Enchilada sauce - I used a 15 ounce can of red enchilada sauce. Some grocery stores carry a larger 20 ounce can, which will also work.
Cheese - I used a combination of cheddar cheese and shredded Chihuahua cheese. Use any kind of cheese you like, such as Monterey Jack or munster, as long as it is a good melting cheese.
Sour cream - a cool creamy topping that's optional. Mexican crema works too.
Favorite toppings like - sliced green onion, sliced jalapeños, sliced avocado or guacamole, black olives, pico de gallo, and fresh cilantro.
Directions
1) Preheat your oven to 375 degrees F.
2) Heat a large skillet over medium heat. Add the oil or spritz with non-stick cooking spray. Add ground beef, chopped onions, minced garlic and cook until meat is no longer pink. Drain off any excess grease.
3) Add rinsed and drained black beans to the meat mixture along with the taco seasoning and water. Stir to combine until water is absorbed.
4) Spray the bottom and the sides of a 11 by 7 inch baking dish with non-stick cooking spray. Add a 1 and โ cups of crushed Doritos to the bottom of the pan.
5) Layer half the ground beef mixture over the Doritos, then add one cup shredded cheese, and half the can of enchilada sauce.
6) Repeat the layers: Doritos, remaining ground beef mixture, cheese, enchilada sauce. Finish with a final layer of crushed Doritos and shredded cheese.
7) Bake in the preheated oven for about 20 minutes, or until the cheese is melted and the sides of the casserole are bubbly.
8) Serve with a dollop of sour cream and your favorite toppings.

Can I freeze nachos?
Yes, just store them in a freezer safe container or freezer zip top bag in an even layer. Freezer for up to a month. When ready to eat, bake in a preheated 350 degree oven for a crispier texture or in the microwave if you're in a hurry.

- 2 teaspoon garlic minced
- 15 oz black beans rinsed and drained
- 2-3 tablespoon taco seasoning homemade or store bought
- ¼ cup water
- 4 cups Doritos crushed
- 3 cups shredded cheese cheddar, Chihuahua, Monterey Jack
- 15-20 oz red enchilada sauce canned or homemade
Topping Ideas
- Sour cream, sliced jalapeños, cilantro, guacamole
Instructions
