What goes into the recipe
How to make Rotisserie chicken salad
Separate the chicken meat from the bones and skin. Chop meat, celery, and onion.
Combine mayonnaise and sour cream in a large bowl. Add chopped meat, celery, and onion. Mix gently until well combined.
Taste and season with salt and pepper.
Expert Tips
It's easier to pull the meat from the bones when the chicken is still warm. If time permits, pull the meat from the chicken as soon as you get home from the grocery store. Store meat in a ziptop bag or covered container until ready to use.
Rotisserie chickens can vary in size so you may want to adjust the amount of mayo/sour cream accordingly. Most will give you about 4 cups of meat.
You don't have to keep it simple! While this recipe is about as simple as it gets, you certainly don't have to limit yourself to this basic recipe. Add grapes, chopped pecans, raisins or apples if that's more your style.
Always store chicken salad in the refrigerator or cooler. It will keep for 2-3 days.
