This is an overview of the recipe. Scroll to the bottom of the post for exact amounts and printable recipe card.
Ground turkey - we use 93/7 ground turkey to keep this dish lower in fat. You can use ground beef or ground chicken, or lean ground turkey (97/3).
Worcestershire sauce - light soy sauce could be subbed. Just keep the sodium content in mind.
Seasoning - you can use a seasoning blend or something simple like salt, pepper and garlic powder. I used my Texas Roadhouse steak seasoning.
Mayo - any variety your like
Spicy ketchup - any kind of ketchup will work. Spicy ketchup made this a little different. Go with your personal preference.
Fresh cloves garlic - chopped
Spicy pickles - I like Famous Dave's Sweet and Spicy pickles. You can use whichever brand is your favorite, or use plain hamburger pickles.
Hawaiian rolls - mini burger buns can also be used. Small soft dinner rolls are also a good substitute, as well as brioche slider buns. I would steer clear of rolls that are hard or chewy.
Cheddar cheese - I used sliced cheese, but shredded can also be used.
Pepper Jack cheese - used sliced cheese but shredded can also be used.
Butter - for topping the sliders.
Sesame seeds - for topping the buns. You can use poppy seeds or you can omit them.
Chopped fresh parsley or cilantro for garnish.
Non-stick cooking spray or a little olive oil for the pan
Extra toppings - you might like to serve this with some traditional burger toppings like lettuce, tomatoes, and caramelized onions.
How to make
1) Preheat the oven to 350 degrees F.
2) Line a 9 inch by 13 inch baking pan with parchment paper.
3) Prepare the burger sauce: combine mayo, spicy ketchup, chopped garlic, chopped spicy pickles, one tablespoon spicy pickle juice, and mix until well combined. Set aside.
4) Spray a large skillet with cooking spray over medium-high heat. Add ground turkey and cook until browned and no longer pink. Add Worcestershire sauce and seasonings and mix well. Remove from heat.
5) Slice the entire slab of Hawaiian rolls in half horizontally. Place the bottoms on the lined baking sheet. Top the bread with 4-6 slices of cheddar cheese.
6) Add meat mixture on top of the cheese slices. Then add the burger sauce. Add 4-6 Pepper Jack cheese slices to the top of the sauce. If you want to add extra pickles or some sliced red onion-do it!
7) Finally, place the tops of the Hawaiian rolls onto the cheese slices.
8) In a small bowl, melt the butter. Add seasonings. Spoon butter over the sliders, evenly. Sprinkle sesame seeds over the top.
9) Cover with foil and bake for 10 minutes. Remove foil, then bake for an additional 5 (or more) minutes or until the cheese is melted and the tops are slightly golden brown.
Tips
Use any cheese you like or have on hand, just as long as it melts well. American cheese, gouda cheese and mozzarella cheese are all good choices. Sliced or shredded is up to you.
If you don't have a 9 by 13 inch pan, a large sheet pan can also be used.
I like to use an insulated pan or add a couple sheets of heavy duty foil under the parchment paper. The bottom of the buns can be hard to cut through if overcooked. Or, after halving the slab of rolls, cut or pull apart the bottom layer so they will be easy to serve from the pan.
