This blueberry lemon overnight oats recipe is a nutritious and delicious way to start your day. This easy breakfast is prepared the night before for a quick grab and go meal or snack. You just need a few minutes to whip it up!
2teaspoonmaple syrup or honeyplus more for drizzling
⅔cupold fashioned oats
½cupblueberriesplus a few more to place on top
Instructions
Mix yogurt, lemon zest, milk, chia seeds, and maple syrup together in a bowl until combined.
Add oats, stir well.
Gently stir in the blueberries.
Spoon oatmeal mixture into 2 small cups.
Cover and chill for at least 4 hours or overnight.
If all the milk hasn’t been absorbed, give it a stir before serving.
Drizzle with honey or maple syrup and top with a few fresh berries and lemon zest.
Notes
Using more or less oats in the recipe will yield a thinner or thicker finished product. I don’t recommend using less than ½ cup or more than one cup.Use old fashioned oats, not steel cut for best results.Greek or French style yogurt works best. Chobani and Oui each have a great tasting lemon yogurt.Keeps for 3 days covered in the refrigerator.
