Instructions
Preheat your oven to 375 degrees F.
Heat a large skillet over medium heat. Add oil or non-stick cooking spray. Add ground beef, chopped onions, minced garlic and cook until meat is no longer pink. Drain off any excess grease.
Add rinsed and drained black beans to the meat mixture along with the taco seasoning and water. Stir to combine until water is absorbed.
Spray the bottom and the sides of a 11 by 7 inch casserole dish with non-stick cooking spray. Add 1⅓ cups of crushed Doritos to the bottom of the pan.
Layer half the ground beef mixture over the Doritos, then add one cup shredded cheese, and half the can of enchilada sauce.
Repeat the layers: Doritos, remaining ground beef mixture, cheese, enchilada sauce. Finish with a final layer of crushed Doritos and shredded cheese.
Bake in a preheated oven for about 20 minutes, or until the cheese is melted and the sides of the casserole are bubbly.
Serve with a dollop of sour cream and your favorite toppings.
Notes
Store in an airtight container in the refrigerator for 3-4 days.
Pre-shredded cheese is a great time saver.
Use a sheet pan if you're feeding a crowd and double or triple the recipe.
