Garnishes like sliced black olives and pico de gallo
Instructions
Heat oil in a large non stick skillet over medium high heat. Add ground beef, all purpose seasoning, chili powder, cumin, oregano, red pepper flakes, and salt and pepper and cook until beef is no longer pink and cooked through. Transfer cooked meat to a plate and drain off any excess grease.
Add cubed velveeta, diced tomatoes, diced green chiles, and salsa verde to the skillet. Heat over medium heat stirring constantly until velveeta is melted and combined with other ingredients. Add Monterey Jack cheese and stir until cheese is melted and well combined.
Return cooked ground beef to skillet and mix into queso. Top with chopped cilantro.
Serve immediately.
Notes
This queso is best served right away, however you can make it then store it covered in the refrigerator until needed. Heat it up in a microwave safe bowl when ready to serve, or warm up the crock pot for a couple hours. Start on high, then turn the heat to low to keep the cheese from burning. You can also make this in the crock pot or slow cooker. Cook the ground beef first, then add all ingredients to the crock pot. Cook on high until cheese is melted then turn to low and keep warm.See post for more tips!Adapted from Damn Delicious
